I have a kegerator that came with a CO2 regulator and tank. It's a single guage regulator but it looks like I should be able to expand it to a dual gauge by buying a high pressure gauge with left hand thread. Same thing with expanding it to support two kegs by removing the existing shutoff valve, replacing it with an WYE adapter, and then connecting two shut off valves into the WYE adapter.

There shouldn't be any tricks to this outside of actually getting the original shutoff valve removed, right?

Nope, seems like you got it figured out right. IMO, the higher pressure gauge is a waste, when you store your tank in the fridge, the gauge reads low anyway and is inaccurate.
