So far so good. After a little looking around I think I need to use the 10' 3/16" beer line. The guy at the store used 5' of 1/4" and I'm a bit fast and foamy. My questions are: Are the post fittings and cobra taps universal so 3/16" will squeeze on where the 1/4" is? And, what's with the fancy fittings holding the hose at different ends? Will regular hose clamps work?

Not really, but a mug of boiling water will soften the hose enough to force it on.
Regular hose clamps work fine.
 
+1 what David_42 said. The 1/4" line will stretch over the barbs after soaking the ends in very hot water. You'll have to cut them off to remove them.
