I was wondering if it would be possible to do a 3 gal batch of port in my 5 gal better bottle. I was thinking about doing the wine kit up, pour it into the BB, and then take it to my kegerator to purge out any headspace of air.

I don't want to ruin an expensive kit though.

Thanks for any advice.

I wouldn't do that. I'd go ahead and get a three gallon carboy. There is just way too much headspace in there, and I think it would oxidize. I understand that you'd purge the headspace, but that wouldn't be the way to go either. In wines/port, you don't want co2 in your liquid. So, you'd have to degas it (which would leave you all the more vulnerable to oxidation) and then you'd still have all that headspace.

Thanks for the response Yoop. That is what I figured, but I thought I would double check before buying another fermenter. The port kits are just too expensive to gamble with.
