I'd like to brew this today. Feedback is appreciated. Borrowed some ideas from a few recipes I've looked at...

5 lbs. Pale Wheat Malt
5 lbs. German pils
8 oz Munich
8 oz Honey
8 oz Chocolate Wheat
1 oz Tettnanger 60 minutes
WLP300 Hefeweizen

Mash at 152-154 60 minutes (or until conversion complete)

This should make a fine Dunkelweizen, but a little on the dry side. The honey is unecessary and you probably won't taste it in the final beer but won't hurt anything.

The only thing I'd suggest you add is some dark crystal malt. I like 6oz each of C40 and Special B in my Dunkelweizen recipe, and it helps make the beer more than just a darker Hefe, it gives it a nice rich caramel, plum note.

Thanks for the feed back. I ditched the honey, upped the Munich and added Special B and C40.
