I am planning on brewing Jamil's Evil Twin recipe but I am having a little Amarillo Pineapple fatigue so wanted to make some hops substitution. I am thinking

0.5 oz Centennial 20 mins
0.25 oz Williamette 20 mins
0.25 oz Simcoe 20 mins
1 oz Centennial 10 mins
0.5 oz Williamette 10 mins
0.5 oz Simcoe 10 mins
1 oz Centennial KO
0.5 oz Williamette KO
0.5 oz Simcoe KO

then 1 oz dry hop of each: Centennial, Williamette, and Simcoe

Thoughts?

I also have the following hops: Sorachi 10.9%, Amarillo 7.8%
Saaz 5.8, Tett 3.2, Chin 11.5, Haller 3.9, Northern Br 9.8, Styrian 5.2, CTZ 14.5, Perle 7.2, Mt. Hood 4, Casc 5.4, and Citra
 
I've used CTZ as the bittering with about 4:1 ratio total of Centennial/Cascade at 10 and KO (IIRC it was 2 oz each addition) with a touch of CTZ at KO as well...about .25oz if I recall. It was simply amazing. I didn't do the same type of all late hopping like that however. I like the combo you have posted I just don't know without plugging numbers if it going to be bitter enough?
