My Honey Kolsch extract kit from NB is fermenting away, does anybody have any experience with it? I expect it to go fast, and am already daydreaming about my next batch for early summer.

I'll post updates as it gets closer to drinking day.

Racked to the secondary today at 1.011, will leave it there for 2 or 3 weeks until things clear up a bit more.

Looking back at the original recipe and my additions, I added the honey too early - with about 30 mins left in the boil. Could there be any negative effects from this?

Wow, I thought my FIL invented the Honey Kolsch. Didn't know they now have a kit.

He used two pounds. It needs aging, probably 10-12 weeks, but it was amazing after that.
