I was wondering if a 14 gal. conical fermenter would be to big to ferment only
5 gal. of beer. would all that extra head space present a problem.

It will be fine. I use 14 gallons for my batches. 5 - 10 gallons. No problems. 5 gallons will produce more then enough CO2 to cover the wort and purge the O2 from the fermentor.

Do you have a plastic one? If so, do you have pics? Was considering making one, but am not quite sure what I want yet

That one in the picture isn't 14 gals, is it???

I'm curious how you handled the valves.

No, that one is a 5 gallon. But I have plastic 14 gallon ones I use now. I didnt like that little one. I use both valves. I use the racking valve, the upper one, for xfer to 2ndary or to bottle/ keg. I use the bottom one to shoot out a plug of yeast if I want to save it and use it again.
