So, I brewed an English mild yesterday on a new system and took the gravity reading this morning. It was supposed to be 5 gal. at 1.037 but came out as 4 gallons at 1.056! My calculations tell me I should add about 2 gallons to correct the gravity. Will adding this much water change the flavor terribly or will I be just fine?

Probably be fine. I do the same thing sometimes. Just be sure to bring the water you are using to dilute around 180 degrees to kill any bacteria.

When you water it down there is more going on than adjusting the alcohol level.
By taking your five gallon recipe and making it six, your beer will have less flavor.
I would take it to the intended five gallons and let the alcohol be what it is.
