After an Ale has been bottled/kegged what temperature should it be kept at until it's ready to be served (while it's aging)? Thanks, Mike
 
Technically its room temperature... But then the question of what is room temperature comes into play... For propper carbonation to take place I find anywhere from 70-76* is acceptable and then after 1-2 weeks you should have carbed beer... then go ahead and just seller it for aging...
 
I let mine carb in the hall closet for 2-3 weeks, then age it in the cellar until I am ready to drink them. I also like mine to have at least 48 hours at drinking temp first.
