anyone have or know where i might find a recipe for wittekerke?

let me ask this a different way...

for those of you who have not had this beer, it's not hoegaarden but it's not blue moon either. a belgian wheat with a very subtle and crisp flavor, hints of lemon... actually looks like lemonade too. something for a warm day type of thing, but definitely not to chug.

any recipes come to mind?
 
Yeah, I would just go from taste and make changes as needed.

from your experience, how could i get the crispy or lighter wit style? i assume a different grain package, thoughts on a possible change to accommodate that style?

-Barley Malt (40-60% malt bill)
-Wheat Malt (40-60% malt bill)
-Hops varies, but normally a "noble" hops
-Yeast - A belgian strain - normally adds some "spiciness" to the overall beer
 
You could lighten the body with flaked corn or sugar and shoot for a lower ABV in general.

You really want a large portion of unmalted wheat in any wit.

I would go with styrian golding or saaz hops...they have a smooth clean flavor. saaz is a little more spicy.

There are two white labs wit strains and many belgian yeasts. Using WLP500 might give you a cleaner flavor than the wit strains. Ferment cool (low 60s).
