The thermostat contrtol seems promising, but the brew belt jus seems to good to be true.

You guys have any recommendation or advice on either of the above, or alternate ways of maintaining temp?

I've got that same thermostat being delivered today.

The problem with the brewbelt is that it only helps with half of the problem - keeping temperatures up when your ambient temp is too low. That's really not even half the problem; it's a much, MUCH greater challenge for most of us (Yooper excepted) to keep fermenation temps down. Ergo, the thermostat hooked up to a spare fridge.

I'm also not sure whether you can use the brewbelt on a glass carboy, although that's a problem that's easy to fix (use buckets or Better Bottles).

I have the same thermostat.

My recommendation...when you first set things up, place a digital probe thermometer inside the freezer (or whatever you're using) so that you can read the same temperature that the thermostat probe is reading. Make sure the probes are located close together.

This will help you calibrate the desired temperature. I've found the dial on the thermostat is a bit "rough around the edges" and you don't want your beer freezing or getting too warm.
