Thinking about doing a 1 gallon to get started and here's my thinking:
Want to be semi sweet
want to be sparkling
no spices or flavorings, just want a honey flavor

Any advice? esp on yeast to use and how much honey to use

Thanks as always!!!

3 pounds would do it
ferment it cool
honey is like lager beer it werks much better if u keep it cool
49 to 52 degrees seems to be my magic number

...ferment it cool
I would agree, however the specific range depends considerably on the yeast strain being used. Typically 65-70°F works well with most strains.

I would not advise following this temperature range for mead... ;)
