wheat kolsch... sort of

I plan on using this recipe for a wheat kolsch. Input and suggestions will be considered.

EXTRACT BATCH:

6.5 LBS Pilsen LME
1 LB Pilsner malt [steeped]
.50 Lb White Wheat malt [steeped]

1.25 ozs tettnang bittering hops
.50 oz tettnang aroma hops

Wlp029 yeast

Since Koelsch traditionally contains wheat malt, you don't need to call it a wheat Koelsch.

You can't really steep those grains. You'll need to do a minimash.

I would mash lower, like 148-149, but I don't think it'll matter much as long as you can convert all the starch.

I like this one:

Amt Name Type # % / IBU
1 lbs Kolsch Malt (Global Malt) (6.1 SRM) Grain 1 11.6 %
1 lbs Wheat, Flaked (1.6 SRM) Grain 2 11.6 %

1.00 oz Tradition [6.00 %] - Boil 60.0 min Hop 4 16.1 IBUs
1.00 oz Spalter [4.50 %] - Boil 30.0 min Hop 5 9.3 IBUs
