Friend of mine had way to much from his harvest and was awesome enough to share his extras with me. I am grateful and confused. Most of them are bittering hops and I am concerned about not knowing the IBU rating. How can I make a balanced beer with them? Should I just go with the rating on Beersmith? What strategies do you use?

I was just given:

3oz Horizon
4oz Centennial
2oz Columbus
1oz Chinook
6oz Brewers Gold
2oz Nugget

Cheers!

Centennial (obviously), Columbus, and Chinook all make great (in my opinion) late/dry hopping choices

The other option is to throw them in your attic for a year and then brew lambics with them.
