Ok, My brew is set (original gravity around 1.071) -- and right now I have a starter on a stir plate that for whatever reason just really started to take off this afternoon (after being on there about 24 hours with little activity).

My carboy is full and sitting in my fermentation fridge sitting at 75 degrees and chilling down the last few degrees to my desired fermentation temp of 67.

So here's my question -- would it be better to go ahead and pitch this yeast at the peak of it's activity in the starter while the brew is a little hotter than I'd like or should I let the starter go through the night to tomorrow morning and pitch once my brew gets down to 67. The Carboy is obviously covered and sanitary.

Thoughts? Thanks. :mug:
