For a Summer beer I decided to try my hand at making a recipe. This will be my third batch but my first one not using a kit. I'd wanted to make a honey wheat for a while but then I saw an episode of Brewmasters where they put peppercorns in a wheat beer and decided I had to try it. Might as well do both, I think they should pair well. It will be a 5 gallon batch with a 2 gallon boil.
Recipe is:
*Steeping*
Caramel 20L - 1/2lb - Steep 20 Mins @ 150
*Boil*
Briess Unhopped Wheat LME - 6lbs - Boiled 60 Mins
Hallertau Pellet Hops - 1oz - Boiled 55 Mins
Minnesota Clover Honey - 1lb - Boiled 30 Mins
Grains of Paradise - 2 grams - Boiled 10 Mins
Tettnang Pellet Hops - 1oz - Boiled 5 Mins
Bitter Orange Peel - 1oz - Boiled 3 Mins
*Fermentation*
Pitch White Labs WLP400 Belgian Wit, Ferment around 68 degrees.
After a few days in the primary planning to toss in a couple more spoonfuls of honey, not a ton, mostly just to add a tiny bit of sweetness, then allow yeast to finish in primary. Rack to Secondary then add:
1oz Black Peppercorns
Wait 4-5 days then bottle condition.
Anyone have any criticisms? Like I said I've never made a recipe before, I've been slightly worried there might be too much going on with the flavors but I've read a couple reviews of some smaller scale commercial beers that were similar and people raved about them.
