Anyone know what that is? It's not slimey, it actuall seems flakey when you put a spoon through it.

I've noticed this in a few brews when using some bulk nottingham yeat but I noticed no off flavors. This last brew though I was getting a green apple flavor/smell in the beer. Trying to figure out if the white flaky stuff is an infection, possibly living with the yeast in the bulk pack I had stored in the fridge.

Either that or the yeast was to old and the Acetelhyde flavor is from weak yeast.

It's likely just the yeast.

Does it look at all like this? I get some freaky flocculation with Wyeast 1084 -Irish Yeast. I n order to prevent the possibility of an infection I have never fooled around with the film, and my beers turn out just fine.
