well im going to brew a hefe today here is the grain bill

6.61 lbs of wheat
4.41 lbs of vienna malt
1oz of Hallertau 2.1% alpha
Wyeast German Wheat. #3333

Im thinking of boiling the hops for 60 mins the orginal recepie called for Northern Brewer .53 oz at 60min and .32 oz at 30 mins. think it will have enough bitterness at 2.1% alpha acid? or should i stop by the brew store and pick up another pack.

Your malt equates to about 6.6 lbs of DME.

I use only 6 lbs of DME and 3% AA Hallertau Herbrucker hops in a 60 min boil. This makes a sweet Franziskaner-style weizen.

Get more Hallertau hops. You will need more than 3% because you are over 6 lbs. From my experience I would recommend 3.4%. ;)

I do not recommend using the NB hops.
