well, i wanted a hop bomb, and do a mostly hopbursted IPA, but didn't want to waste a hole lot of hops for the 20-0 additions, that's why i added the FWH.

trust me, i've done worse. think 90 minute IPA clone, complete with 90 individual equally weighted hop additions. twice.
 
Were you planning on using Carafa Special (de-husked) or the plain Carafa? I'd suggest using the de-husked version for this style.

Looks really good, but better get those hops ready the night before. :cross:
 
well, all i have is carafa II, so that's what i was going to use. and i'll have friend there to help me with those hops tonight. they won't be drinking for free. labor will be involved. and since they're all 20-0, i'll have time to measure them out.
 
preboil is 15 brix. i modified the recipe adding 1# of wheat. preboil was supposed to be 14 brix. woohoo!
 
with the addition of the wheat, post boil was 1.070. hit it. it is now 0132 and i'm whooped. nite!
 
I just kegged a black ipa in the style of stone ninth anniversary and it might be the best beer I have ever brewed. When I first tasted it (warm and flat) I immediately set about getting the ingredients for another batch because I know all too well what is going to happen to it once it is tapped. I really love this style and I think the caraffa II works beautifully. I also think it needs lots of floral dry hops. The best part of this style is the surprise you get when you taste and smell a black toasty beer with such a wonderful hop profile.

7 Gal. Batch

21lbs. Great Western Two Row
1lb. Carafa II
1lb. Crystal 60

4oz. Chinook pellets (90 min.)
1.5oz. Amarillo pellets (0 min.)
1.5oz. Simcoe pellets (0 min.)
1.5oz. Amarillo pellets (dry hop 10 days)
1.5oz. Simcoe pellets (dry hop 10 days)

This was mashed for 60 minutes at 152-3
The pre-boil gravity was 1.066
The boil was 90 minutes
The post-boil gravity was 1.091
The final gravity was 1.018
The alcohol content was 9.57% ABV
The IBU was 118
The color was 28.4 SRM

I ended with just under 7 gallons and pitched on half of a yeast cake of WLP001 California Ale Yeast.

My next batch is going to be pitched on a cake of Wyeast 1968, which I think is closer to Stone's house yeast. But the WLP 001 made a wonderful beer and I wouldn't hesitate to use it again.
