1 Gallon Batch

I was thinking about trying out mead-making, but didn't want to invest in a full 5 gallon batch. Seems like I could do a 1-gallon batch with one of those $4 glass jugs I see on brew supply sites. Anyone do this? Seems like 2.5-3 lbs of honey would work OK in there. I have just started reading about meadmaking, so hopefully this question isn't a dumb one.

Some other basic questions I've had some difficulty finding a definate answer on:

- Should mead be carbonated? I've read of it both ways, but whats most common?

- Should mead be bottled in serving size bottles? Would I be safe racking back and forth between 2 - 1 gallon jugs and capping one off once fermentation is complete? Would I be able to pour a serving and recap afterwards?

- Boil? No boil? I've seen both ways. Again, what's most common?

I realize most of these questions may be contested between meadmakers, but I'm just trying to get a handle on whats most commonplace?

Mead isn't usually carbonated in the UK but I see no reason not to try it if you like it 'Fizzy'. I'm thinking about trying it for my next one.
The racking between 1 Gallon jugs will work well to clear it but save all your efforts til you bottle it and let it age. Use small bottles for your batch - With 1 Gallon thats a tiny amount of bottles.
I say don't boil. Add (just boiled) hot water and scoop off the wax/etc when it's cooled.
