how to make my ginger beer less sweet and more bitter/tart?

Hey guys!

ive done a ginger beer extract and it came out to sweet...i drank it :cross:
but i dont want to do another the same..

here are a couple of idea's i have...
1. add hop pellets?
2. add a beer LME?
3. add a unhopped beer LME?
4. Malic acid?

your opinions on getting it more bitter/tart??
 
well...it was alcoholic...
we dont really call it soda in australia...so i may have a look in that thread!

but if anyones got any idea's...let me know!
 
Yes it is a beer and my wife loves it. Adding any type of LME will just make it sweeter so I would increase the hops.
 
yeah was thinking the malt may increase the sweetness...
any hop pellets you could name that would compliment a ginger beer?

i have some left over amarillo hops, they are pretty bitter, or would you for something abit more subtle?
 
If your making a new batch then the amarillo will do fine. I'm afraid your out of luck on the one that is already made.
