Hi, I was wondering how much time you should leave your bottles in room temperature so they can carbonate. The thing is I want to let the bottles carbonate and then store them in a fridge to age for a while, but I want to make sure I have given the brew enough time before exposing it to cooler temperatures.

I wait atleast 2 weeks and then put a couple in the fridge and try them the next day. If all is good I put them all in the fridge if not I wait 1 more week. Really it depends on the temp of the room and how much priming sugar you use. Usually I'm good after 2 weeks 99% of the time.

Cheers

I always try one after a week. On brew night I will drink a 12oz of whatever I brewed last week as part of my brew night ritual. I will let the rest age for two weeks before they go in the rotatation.
