Found a new package of corned beef in the fridge----from st paddy day. Still OK to smoke, or should I throw it out? I'm guessing toss, but wasn't sure.

Sounds like I was beyond sketchy. I was hoping for some kind of magical brine powers or something.

Check the smell. If it smells ok id say go for it. One thing people forget is that we are animals. Yes we are well um "cats" (get my drift) when it comes to our ancestors. For thousands of years we didn't have the fda or other nanny programs to "protect" us.

As long as it's been frozen all this time it should be fine. I stock up on corned beef around St. Patrick's day for use throughout the year (we eat it about once a month for breakfast). I've never had any issues whatsoever.
