Headspace?

Looking through other threads I see that it isn't always advised to use a larger fermentation device than is needed e.g. using a 5 gall carboy for a 3 gall kit etc. Can anyone explain this? I currently have a large fermentation bin I got from my homebrew store and a 30 bottle kit, however, there is a good bit of "space" between the meniscus and the stop......does this matter?
 
the main reason to worry about headspace is oxidation. But since your wine is actively fermenting, CO2 is being produced, and forcing the extra oxygen out of the bottle. what you do want to worry about is aging wine in something with a large ammount of head space. in that case, CO2 is no longer being effectively produced.
