I've done a couple of batches now with no problems that I'm aware of but I had a question about the yeast. I've been using the Cooper's kits but there isn't specific details about the yeast. All I've been doing is adding it to the wort and then stirring it. Do I need to add it to water first and do I need to stir it in?

What you're doing is fine but if you want you can rehydrate the yeast by using these instrctions from homebrew wiki:

"To rehydrate your dry yeast, simply sprinkle the dry yeast into a cup (1c) of 104°F sterile (pre-boiled) water 30 minutes before pitching. The temperature and time are recommendations..."
