Is there anywhere that has a list of different yeasts and when/why to use which kind? I was reading a wine recipe book, and several recipe's have said to use a sherry wine yeast - I was wondering why a sherry wine yeast in some cases?
 
that's what I was looking for! thanks!

so, a sherry yeast would be for higher sugar/higher % alcohol..... might be interesting to try some of those recipes for the fun of it. Glad I have several 1 gallon bottles now!
