So, back when I was starting to brew things, I tried to make two batches of a mead type thing in a plastic gallon jug that used to have apple juice in it. I didn't sanitize very well, but it seemed that the fermentations got stuck right away. My honey-based mead sat there for a while, and then molded on top (I definitely didn't sanitize well). But during both batches, I didn't notice any bubbling, or even air-lock movement.

Now I use a 7-gal bucket as my primary, and I was wondering if certain types of plastics are bad for use as brewing vessels.

How To Brew (While it looks like you are brewing wines/meads there is some good advice in that book that will carry over to all types of brewing.

The above links will give you some guidance on brewing in plastic. I would highly recommend not brewing a beer or making any other beverage in a plastic container that contained another beverage.

Sanitation is another big factor. If you don't sanitize correctly you are creating more potential for problems.
 
Sanitize well and you'll avoid the mold.

I use clean and sanitized apple juice bottles for my batches of apfelwein and they work just fine with a stopper and airlock.
