I'm trying to come up with my own simple APA recipe. What do you all think about this? I'm trying to keep it on the maltier side at the low end of bitter scale. Hopefully this pastes properly...

Thanks!

Having over 10% of you grain bill being specialty malt definitely will give a malty brew. Honey malt isnt a normal addition, nor is Fuggles hops in an American Pale Ale. To each his own. I wouldnt mix fuggles and cascade though, the profiles will muddy a bit. People do it (even Firestone Walker), but realize it wont be like a american pale ale like Sierra Nevada. (Cascade=citrus, fuggles= earth/spice)

I think it looks great. 1/4lb of honey malt would probably be good. I wouldn't use more that that, though. As far as mixing fuggles and cascade, it's true that that's a little unorthodox, but it's not so far from the Willamette/Cascade mix that a lot of people use. I've made an IPA and an amber with that combo and it's worked great both times.

At very least, you've got a nice base to work with here.

Thanks for the input so far! I like the idea of breaking the rules, so I think I'll keep the fuggles and see how it works out. I've tweaked it all a bit, dropped the honey malt to 2oz. Now, I'm considering just breaking the style and dropping the 60min cascades to .5oz or so (drops the IBU to 23). I'm thinking this because the last pale ale I made ended up being out of style in the same way, and everyone just RAVED over it. So, while it might break the style, I think it will be more enjoyable to those I know (and me!). I don't know, maybe I'll just have to make both for a comparison :)
