I plan to do this tomorrow. I haven't done any AG wheat mashing yet. I'm using hops that I happen to have. Any suggestions?

1.00 oz Hallertauer, New Zealand [8.50 %] (60 min) Hops 29.5 IBU

I would lose the rice hulls and one of the Crystal malts, probably the Carapils. I would also drop the IBUs or use different yeast. It just seems too bitter to work with that yeast...
 
I'd drop both the Crystal and Carapils, replace them with wheat and definitely use the rice hulls.

I agree that the IBU strikes me as high, but that's your bag; if you like hops, go fer it. With that hops schedule, you will obscure somewhat the ester profile from the yeast, but that's your decision. Personally I am not fond of hops in my Hefeweissen.

The lemon zest ought to add a yummy note!
