I had some friends ask me to make them a Mango Cider, and after looking through the recipes section I think I have a pretty good idea of what I want to do.
4 Gallons of Apple Juice
1 Gallon Mango Juice
2 Cups of Honey
Add Mangoes to the secondary
What I've been trying to figure out is what kind of yeast to use. I don't want it to dry out too much and I haven't really played around with Ciders before, so any ideas? Also how much fruit flavor tends to linger with fruit in the secondary, I'm hoping to get this to have a pretty strong mango character.
