I am getting some cutting/welding on friday to change my 15.5 gal keg into a brew kettle and one of my 7.75 gal kegs into a steam boiler.

I have two other 7.75gal kegs that I am considering turning into fermenters. My thought is to weld a 2" threaded nipple to the top of each so that I can either allow blowoff, fit it with an air lock, cap it, or stick a CO2 adaptor on it, as per the need du jour. I would also have a hole cut in the bottom for a 1" SS nipple which I could either cap or fit with a drain for pulling out the sediment.

Opinions?

same way as i clean my glass carboys. soak it, then push in a giant bristly brush. but i take your point. I can actually see when the glass carboys are clean.
