Stopping fermentation

This maybe a stupid question, but...

What is the difference between brewing ale and cider? I've done some ale and there is no worry about stopping the fermentation, but I read a lot here of stopping it for cider.

Why will ale/beer not go bad, but cider will?
 
you only stop fermentation if you want to retain some sweetness. all the sugar in apples is fermentable by yeast.
