I'm brewing a Fresh Hopped Pale Ale tomorrow and wanted to see what you guys thought about the recipe.

It's a simple Extract based recipe (see below) which I've had a lot of success with when brewing pale ales, what I'm less sure about is the hop profile.

Does the amount of fresh cascade hops I'm using look about right at flame out and for dry hopping. Do you think the Amarillo is going to get lost with all of the Cascade or do you think some of it's flavor/aroma is going to come through with the cascade?

The recipe is a partial boil, I'll be topping up with a couple of gallons of water. The hop amounts and the calculated IBU take this into account.

Any advice would be much appreciated.

3.5 Gallon Batch

Fermentables

US Caramel 60L Malt 1.00 lb 16.7 % 15.1 Steeped
Extract - Light Dried Malt Extract 1.00 lb 16.7 % 0.8 Start Of Boil
Extract - Light Dried Malt Extract 2.00 lb 33.3 % 1.5 End Of Boil
Extract - Amber Dried Extract 2.00 lb 33.3 % 5.3 End Of Boil

OG 1.056
FG 1.013

Hops

German Northern Brewer 10.6 % 0.50 oz 60 mins
US Amarillo 9.2 % 0.35 oz 15 mins
Fresh Cascade 1.0 % 7.00 oz Flame out
Fresh Cascade 1.0 % 5.00 oz Dry-Hopped

IBU 38

I think 0.35 ozs of Amarillo at 15 minutes would be hard to detect if it was the only hop in the recipe. I would drop it altogether, and just try to highlight the Cascade in a harvest ale.

Personal preference; I think you have too much crystal. The amber malt will have some. I would cut it down to 0.5 lbs.

Where did you get the 1.056 from? I think you are closer to 1.070 for 3.5 gallons.

I would probably switch out a LB of DME for sugar to help lower the FG.

Ok, I tweaked the recipe based on your suggestions (see below). I dropped the amount of Amber DME and Crystal and replaced with sugar. I also dropped the Amarillo.

3.5 Gallon Batch

Fermentables

US Caramel 60L Malt 0.5 lb 9.5 % 7.5 Steeped
Extract - Light Dried Malt Extract 1.00 lb 19 % 0.8 Start Of Boil
Extract - Light Dried Malt Extract 2.00 lb 38.1 % 1.5 End Of Boil
Extract - Amber Dried Extract 1.00 lb 19 % 2.6 End Of Boil
Sugar 0.75 lb 14.3 % 0 End Of Boil

OG 1.053
FG 1.009

Hops

German Northern Brewer 10.6 % 0.70 oz 60 mins
Fresh Cascade 1.0 % 7.00 oz Flame out
Fresh Cascade 1.0 % 5.00 oz Dry-Hopped

IBU 41

The numbers all come from BeerAlchemy. I also double checked using a separate online calculator and they matched.

Wet hops carry only a fraction of the hop oils by weight of dried hops. Keep in mind it typically takes 3-4 oz of wet hops to equal 1 oz of dry. Flavor, aroma, and IBUs follow accordingly.

I have a feeling he is aware of this, since he is using 7 ozs at flame out and 5 ozs as dry hops.

I'd leave out the amber malt, and use only light extract and the .5 pound of crystal.

For hops I'd use the bittering hops at 60 minutes, and then use the wet cascade hops at 15 minutes, 5 minutes, and dryhop.

I'd go with 5 ounces at 15, 5 ounces at 5, and then remainder (if you only have 2 ounces left) at dryhopping.

The beer turned out pretty well in the end it definitely had the fresh hop flavor I was going for even though I didn't have as many fresh hops as I hopped so I had to use some pellet hops as well. Below is the final recipe:
