I brewed a high-gravity Christmas ale (1.080) with Wyeast 2112 (Cali Common) and have had an interesting fermentation. I didn't make a starter even though it was old yeast (my bad). Fermentation took about 3 days to finally start, then it seemed to be going pretty steady. I check on the beer about a day in and it had blown up through the airlock, I lowed the temp from 63 to 60 just to slow it down a little. I was just curious if anyone had similar results with this yeast, I was wondering if it was caused by the late start, the high gravity or was jut random.

I've never had it blow up through the airlock at 63 degrees. The three day lag sounds about right for a beer of that gravity, sounds like a really long aerobic phase.

BTW- GO GIANTS!
