I haven't bottle conditioned in years. I did recently, and opened one after 7 days of conditioning. Good carbonation, but it all came out of solution and the head went flat quickly.
Tried one after 14 days, and was much better.
Will the beer stabilize with additional aging ?
 
Yes, to a point. Kind of like a bell shaped curve. The trick is to find out which beers peak out. All brews are different. But in general, at least two weeks in the bottle for Ales and even longer for stouts and barley wines.
