2 Super noob question here.

1) Ed calls for a 5 gallon carboy to ferment in. I shouldn't have any problem in a 6 gallon....right?

2) Should/Can I ferment longer than 6 weeks? Benefits/Disadvantage?
 
Yes, a 6 gallon is fine.

Ferment as long as it takes. Sometimes, due to temperature and older yeast, things don't progress on the same timeline. That's fine- it'll be done when it's done, but like with beer! :mug:

2) should-a month is usually fine. check sg can-yes benefits-time to age disadvantages- can't drink it as soon!

That should sum it up.
 
Thanks guys. I'll start on it sometime this week. A little treat for my wife in December after she has the baby.
