I'm new to the home brewing world and I'm still acquiring my equipment. Is there a big difference between using an universal Carboy bung and using a stopper?

I would strongly suggest going for the universal. The rubber stoppers are a pain in the ass to work with. They constantly pop out and, if you aren't careful, can be pushed all the way into a carboy. That can't happen with the universal.

I would, too, for pretty much the same reasons. Nothing is worse than a rubber stopper slick from StarSan. I used to duct tape them to my carboy to keep them from coming off. What a PITA that was. I now exclusively use the universal type. Plus, you can push the airlocks further down into them, meaning your carboy can be an inch or so shorter than it used to be. That's handy when headspace is tight.
