Dual Brew Orfy's MMA and Homegrown Cascade SMaSH (extract)

This year I planted a few hop rhizomes but did it late in the season and had a pretty small harvest of just shy of 8 dry grams of cascade. So while trying to decide what I want to do with them its looking like a mini-batch of an APA is in order. Luckily I have 2 of the Mr. Beer fermentors sitting unused and figure "Hey, 2 gallons is just about perfect to be dry hopped by those cascades!"

Ok so here is the idea: A dual 2.5 gallon brew day using 2 similar recipes to cut down on extract costs and use up exactly one 6lb LME jug. It looks like if I convert Orfy's Mild Mannered Ale recipe to 2.5 gallon, that leaves enough pale LME to be just about perfect for a pale ale for the cascade.

I'm not 100% committed to the SMaSH being exclusively single malt as I'll have some crystal 60L and chocolate 450 left over from the mild, but I this will be my first time formulating a recipe from scratch so suggestions here are welcome. I feel pretty solid with the Mild turning out great, but by going with extract on the SMaSH am I going to be missing something due to not being able to tweak my mash temps to control the amount of dryness/maltiness. Would S-04 or nottingham yeast work better for the SMaSH? Thanks for any tips, this place is great.
