So I have this idea to brew with Sage since I have a ton in my garden and would like to use some to make an experimental batch. I want to emulate a biscuit in a bottle. Here's a rough sketch for a two gallon batch.

1.5 lb 2-row base
2 lb Biscuit Malt
.25 lb Honey Malt

1 Ounce of Sage at 60 minutes
1 Ounce of Sage for 2 minutes

IBUs? No idea if this is enough but should give it great aroma at least.

Windsor Ale yeast for that nice bready character.
 
So i'm wondering if you ever tried this experiment and how it turned out?
I am a fan of sage and was wondering about it's flavor in beer.... Either in place of hops our in addition, like dry hopping (wouldnt that be dry saging)....
 
I haven't done it yet, though I need to get my sage used before the frost hits home. So, This may be in the line for this weekend. I don't think I'll 2 lb of biscuit though... maybe more like a half pound.
