My wits have not been as white as I would like. Would someone offer insight. My grain bill is as follows:

4.5#belgian pils
4.5#flaked wheat
1#flaked oats

Wit's aren't really suppose to be white. I use almost the same grain bill, but not as much flaked wheat, and I get a yellow color similiar to bud light.

Try substituting some flaked wheat for white wheat. I'm not sure if there's much of a color difference, but I've always been happy with mine.

After looking at Pappers recipe, mine is about the same color. I think it registers 3.4 or 3.5srm. Haven't looked at my recipe stats in awhile. I guess I don't drink BMC enough to remember what it looks like.

A tip I picked up from a post by Saccharomyces but have not yet tried:
"I boil mine for 90 minutes at a bare simmer. Wort is cloudy and almost white in color.
I got the 'bare simmer' technique from a local microbrewer who in turn got the tip from Pierre Celis himself."
