need help-substitute yeast for saturday

Hello-

I have ordered all the ingredients to make two 12 gallon batches on saturday morning.
I ordered them separate and two vial of yeast were frozen!!!!!!they were for my IPA. I am going to put the grain bills up and let you know what I have for plans.....if you can help me with the rest I would greatly appreciate it.

Red Rye-2 vials cali ale V with approp starter
27lbs 2 row
4lbs flaked rye
3lbs rye malt
2lbs crystal 120
.5 lbs carapils
1lb flaked wheat
4 oz black malt-late addition

I wanted to mash at 145 for 10 mins then ramp to 152.
cali ale V with appropriate starter.

hopped to 80+ IBUS all late

IPA-Planned on WL 001 but it was frozen on arrival
30 lbs 2 row
1lb amber
2 lbs corn sugar
1lb carapils
.25lbs crystal 120

SO I planned on using the cali ale......and dont have a brewshop
in town.

I have 2 packs of nottingham
and two packs of US05-
Can someone help with a mash parameter and yeast to fit my grain bill here.....I want a dry beer but want some body....I can use either yeast or both

I do have a little extra carapils and a little more crystal 120!

if your cali v yeast is not frozen the do a multi step starter and split it
mash 152.0 F 60 min
 
I'd mash the IPA at 155F(however, I mash my IPA's at 158F after reading Lagunitas does this) and ferment with US-05(allegedly the same strain as WLP001).
 
okay.....mr malty says 1.5 packs for each carboy for dry yeast......

should I do 1 pack for each.....og is 1.075?

or 2 packs in one carboy

and the nottingham in the other......with a high mash temp of course!!!!

i would do 2 of US-05 in one and 2 notty in the other.

i might do that.....just to see what all the craze is about!!!!!!!It would be a nice experiment between the 2......ferment temp of roughly...........65....beer temp
 
I flip flop between wlp001 and us-05 for my IPA's. I think they are very comparable although I think that us-05 is more flocculant.
