Hi I just started a basic pear wine. I left plenty of room from the top of the demijohn (over 3 inches from the neck) but earlier it's really starting to creep up and within the next hour or so will start pushing through the airlock.

What the best way to handle this? Let it happen and clean it up? Punch the cap?

PS Also worth mentioning the it's not foam it's actually the must pulp.
 
If you haven't got a got a blow tube attached the best bet is to just make sure you clean it up as and when it blows - be careful that the fruit pulp doesn't block the airlock. I always use a plastic brew bucket for primaries rather than carboys.
