I've got my 10 gallons of amber rye on tap and I'm getting massive foam. I cleaned everything out pretty good, and checked the taps with a different keg and got normal head (insert joke here). Also, when the foam settles on the amber it's still pretty fizzy.
So, my question is re de-carbing. Can I just leave the keg open, exposed to air, to release the co2, or will that oxydize my brew? Is there a better way to lesson the vols in my beer?

Set the keg out and let it warm up. Pull the pressure release and let the CO2 out. Repeat until you get the carbonation where you want it.

I've had the same thing happen, shut off the co2 release the pressure from the keg for about 30 seconds (till the hissing stops). Turn the co2 on to about 9 lbs and pour a beer. repeat a couple times if over carb situation continues.
