Any significant difference or benefit? Stock pot is tall skinny and sauce pot is short and fat. I guess I would assume that a sauce pot would heat up quicker?
 
Short and fat will increase your evaporation. That's why stock pots are shaped that way compared to sauce pots. You want sauces to reduce, but not soups.
