I've waited nearly 3 weeks.

My bottles all taste like priming sugar. It's a wheat ale, I think... I used wheat extract and ale yeast....

I have no gravity data, I got my hydrometer just recently and haven't done a brew since.

Is it possible that I added too much priming sugar and the beer became hypotonic to the yeast cells and killed them all?

Take each bottle and give it a flip, head over tails, get the yeast back into suspension.

What temp are you at?

It's OK, they will come around.
