Should it remain in the primary for the entire process? Or, should I move it to a secondary for a few weeks before going to the bottles?

Like niquejim said, there is no need or benefit to using a secondary on a wit. leave it in the primary for two weeks then take three hydrometer readings. Take a reading, skip a day, take a reading, skip a day and take another reading. If the Gravity reading remains constant throughout this reading process then it's time to bottle or keg (plus you get to drink the sample.)

I secondary all my brews...including my HWs. :D

Is it necessary, NO. I agree.

Reason I secondary my HWs is to allow most of the yeast to fall out. I add "some" back in when racking to the bottling bucket or keg. This way there is less yeast in the bottles/keg.

Warrior (a member here) tried a couple of my HWs a couple of weeks ago and said he's going to try it. He was pleased with the results.
