So over 3 weeks ago i brewed a hefe and it bubbled away and completed primary fermentation about a week ago. However the Krausen is persistently floating on top of the beer. Any ideas on how to get the krausen to fall to the bottom or do i just have to wait it out?

If you are sure that fermentation is complete, just rack from under it... don't worry about it. Some strains do that...for example, Wyeast Kolsch leaves a thick krausen for weeks after fermentation is complete.

You could try putting the beer in a colder room/garage/basement around 50 degrees to urge things to fall to the bottom. If you're going to keg the beer, go for even colder, like 35 degrees and really cold crash it.

As BigB said, the yeast used could cause the krausen to stay up...what did you use?

Do you plan to bottle or keg?

I had a belgian strain that did the same thing. Took 24 days to drop. If you carefully go through it, you should be able to rack without disturbing it.

The krausen never fell on an american wheat I brewed a couple months ago so I just racked from under the krausen and got pretty delicious results
