I was at a home brew supply store in Grand Rapids today and picked up some supplies to make an Oberon clone. While I was grinding my grains at one of their mills the clerk went to the cooler to get my hops and yeast. When I got home (a near three hour drive later) I found that they and mixed up my hops. Instead of getting 3 oz of Saaz I got 1 oz of Saaz and 2 oz of Spalt. I called the store and told them about the mix up and they told me to just go a head and use the Spalt.

What would you all do?

Here’s the recipe

3.50 lbs Briess DME Pil-light
2.00 lbs Briess DME Bav Weizen
0.50 lbs CaraVienne Malt
1.00 lbs Carahell Malt

Saaz hops 1 oz each at 60min, 30min and 5min.

0.50 oz Sweet Orange peel

White Labs WLP320 American Hefeweizen Ale
 
What is the AAU on them.

A quick look at a catalogue I have shows they should be in the same range.

The Sazz will have more of a floral aroma, the Spalt has a slightly spicy aroma.

Which ever one you want to be more prevalant in the aroma, toss in last. The Sazz might do well as the 30 min addition. I haven't messed around seeing how diffrent hops affect the same recipe yet, so someone else might have better input.

Sazz- Belgians, Pilzner-urquell
Spalt- German Alt
