Hello, first time brewer and second time poster here - a noob
Almost ten days ago I mixed me a 5 gallon batch of JAOM
Here's my recipe:
8kg Honey
5 Oranges
125-ish Raisins
5 Cinnamon Sticks
10 Cloves
5 Pinches Allspice
5 Pinches Nutmeg
2 Pinches Cinnamon
SAF Instant Yeast
Water
Now, I'm a bit worried about the thing and would like your advice. I have a few questions for you more experienced folk. You can find them (plus pictures and other information) on my Mead Diary here:

These questions are along the lines of:
Oh, no! What is that?
Do I add water or honey?
Is it too cold in here?
...and such.
I hope you can help me out and ease my worries
