Lately I've been brewing with the same strain of yeast. I'll make a starter, brew a batch with it and then have a second batch ready to pitch right on top of the yeast cake. After 2 batches I have a TON of trub at the bottom. My question is if I just rack to a secondary, can I siphon a new batch right on top of the yeast that settles out of the secondary? Is there enough yeast left in a secondary to do that?

Short answer is yes. There would be enough yeast.

But if you keep doing that, your chances of getting yeast that is stressed or mutated increase significantly.

You are probably better off washing yeast from the primary. Added bonus is that you can usually get enough yeast from one wash to make two or three starters.
